Love to eat…Learn to cook it…(Pork Siomai)

Siomai is a dimsum of Chinese origin which is loved by many Filipinos. One can order different kinds of siomai but the base is always pork. The ground meat should have some fat otherwise the cooked siomai will be too tough. Prawns or shrimps can be substituted for part of the pork if desired.

Estimated cooking time: 50 minutes

Shrimp and Pork Siomai Ingredients:

1 kg ground pork (suggested proportion of fat to lean meat is 1:3) or 1 kg Prawn (shrimp) peeled
1/3 cup chopped water chestnuts or turnips (singkamas)
1/3 cup chopped carrots
2 medium or 1 large minced onion(s)
bunch of spring onions or leeks
1 egg
5 tablespoons sesame oil
1 teaspoon freshly ground pepper

1 teaspoon salt
50 pcs. large or 100 pcs. small wanton or siomai wrapper
soy sauce, calamansi (lemon or kumquats), sesame oil and chilli paste (for the sauce)

Wrapper:

1/4 cup water
1 egg
1 tablespoon vegetable or corn oil
1/4 teaspoon salt
1 1/2 cups all-purpose flour

Chilli Paste:

1/8 kilo Chillies (Siling Labuyo)
3 tablespoons cooking oil
2 cloves garlic, peeled and minced

Siomai Cooking Instructions:

Mix all the ingredients for the filling in a bowl.
Spoon 1 tablespoon of mixture into each wrapper. Fold and seal.
Meanwhile, boil water and brush steamer with oil.
When the water gets to a rolling boil, arrange the siomai in the steamer and let stand for 15-20 minutes, longer for larger pieces.
Serve with soy sauce, calamansi and sesame oil. Chilli paste is optional.

Wrapper:
Beat egg and mix with flour till free of lumps.
Bring water, cooking oil and salt to a boil, then pour in flour.
Remove from heat and beat until mixture forms a ball.
Divide the dough into 1 1/4 -inch balls.
Roll each ball on a floured board until paper thin. Set aside.
Simplest version of chilli sauce would be to chop chillies well and fry them in oil, sesame or vegetable oil, never olive oil if you want it to have a Filipino taste.

Chilli Paste:

Combine chopped chillies and minced garlic then simmer for around 20 minutes or till most of the water has evaporated. Add oil, simmer and stir well.

The Supreme Court is Busy, From Neri to 2008 Philippine Bar Result

After the recent release of the court’s decision in the case of Romulo Neri, Chairman of NEDA vs. Senate Committee on Accountability of Public Officers and Investigations, Senate Committee on Trade and Commerce, and Senate Committee on National Defense and Security, a lot of aspiring lawyers now flood the Supreme Court for the result of the September 2007 Bar Examination.

Today, around after lunch, the Supreme Court will release the result of the bar examination. As of now (3:52 pm), the Supreme Court’s website posts “Welcome to the Supreme Court of the Philippines. Please stand by for the forthcoming release of the 2007 Bar Examination results.”

Figures from the Office of the Bar Confidant headed by Deputy Clerk of Court and Bar Confidant Atty. Ma. Cristina B. Layusa showed a total of 5,626 law graduates from 109 law schools nationwide took and finished the exams held on September 2, 9, 16, and 23, 2007 at the De La Salle University in Taft Avenue, Manila.

A total of 5,804 law graduates have filed their petitions to take the 2007 Bar exams; 5,799 were admitted.

The Rules of Court provide that â€œa candidate may be deemed to have passed his examination successfully if he has obtained a general average of 75% in all subjects without falling below 50% in any subject.â€? In determining the average, subjects in the examinations are given the following relative weights: Political and International Law, 15%; Labor and Social Legislation, 10%; Civil Law, 15%; Taxation, 10%; Mercantile Law, 15%; Criminal Law, 10%; Remedial Law, 20%; and Legal Ethics and Practical Exercises, 5%, for a total of 100%.

Medical Science Report says: When the mother of this child was pregnant, she had 2 fetuses inside her, but one of the fetus grew inside the other, this is why this girl was born with the other foetus inside her womb.

How to recognize a STRoke

“Stroke or cerebrovascular accident (CVA) is the clinical designation for a rapidly developing loss of brain function due to a disturbance in the blood vessels supplying blood to the brain.” It is caused by the lack of oxygen supplied to the brain, causing the brain tissues to die. It may be due to ischemia or the lack of blood supply caused by thrombosis or embolism, or due to a hemorrhage. When a severe blood clot, for example, blocks the passage way of the blood to the brain, it may cause stroke.

It is an emergency scenario and every second count in quickly and accurately detecting a stroke. In order to save a patient or a loved one’s life, we must know the early signs of stroke and immediately bring it to the knowledge of doctors.

To recognize a stroke, just remember the first three letters of the word and ask the individual to…
S * SMILE.
T * TALK and SPEAK A SAMPLE SENTENCE (Coherently)
R * RAISE BOTH ARMS.

A new way of detecting if a patient is suffering stroke is to ask him/her to stick out his/her tongue. If it is crooked or goes to one side or the other, then it is a sign of stroke. In cases of stroke, life is hanging by a thread so protect your family and friends by knowing ahead.

DOJ website hacked: NBI is now on the hunt

A felon is a felon, whether it be against a private individual or the government!

YEZ! Last thursday, Jan. 3rd, some felons greeted DOJ with a big surprise for the New Year. For a few hours, visitors of the Department of Justice’s website saw Wizard of Enchanted Kingdom, instead of Justice Secretary Raul Gonzalez.

Â There was no major disruptions in the operations of DoJ, but the incident remains to be a great mockery and an on-the-face insult to the department. If hackers can access even the government department’s websites, how much more private individual’s websites.This poses as a warning to different business establishments as well who uses the internet as a means of a selling point or keeps record or uses the worldwideweb as a means of communication. Important files on the net may no longer be safe and we all have to be cautious.

The DoJ website was hosted by PLDT, who has promised to investigate the event as well. As of now, the NBI is also conducting their own probing and hunt for who is liable for the hacking. Note that hacking is punishable under Republic Act No. 8792 or the E-commerce Law. As Sec. 33 of the said law provides:

“SEC. 33. Penalties. – The following Acts shall be penalized by fine and/or imprisonment, as follows:

(a) Hacking or cracking which refers to unauthorized access into or interference in a computer system/server or information and communication system; or any access in order to corrupt, alter, steal, or destroy using a computer or other similar information and communication devices, without the knowledge and consent of the owner of the computer or information and communications system, including the introduction of computer viruses and the like, resulting in the corruption,destruction, alteration, theft or loss of electronic data messages or electronic document shall be punished by a minimum fine of one hundred thousand pesos (P100,000.00) and a maximum commensurate to the damage incurred and a mandatory imprisonment of six (6) months to three (3) years;…”
